1/2 c. butter or margarine
1 Tbsp. liquid artificial sweetener or 12 saccharin tablets (1/4 grain each), dissolved in 1 tsp. water
1 egg, slightly beaten
1 tsp. vanilla
1 tsp. grated lemon peel
1 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
Preparation

Cream butter or margarine in a mixing bowl.
Add liquid sweetener (or dissolved sweetener), egg, vanilla and lemon peel. Beat well.
Combine flour, baking soda and salt; add to creamed mixture.
Drop by teaspoon onto an ungreased cookie sheet; press flat with a fork.
Bake at 375\u00b0 for 8 to 10 minutes, or until light brown.
