Ingredients

1 c. butter
4 1/2 c. flour
1 c. vegetable oil
1 Tsp. salt
1 c. granulated sugar
1 tsp. baking soda
1 c. powdered sugar (don't pack)
1 tsp. cream of tartar
2 eggs
1 tsp. vanilla (adding about 1/8 tsp. of lemon extract seems to enhance the vanilla flavor)
Preparation

Cream butter, oil and sugars.
Blend well.
Add eggs and vanilla (lemon extract if desired).
Sift together the flour, salt, soda and cream of tartar.
Stir into butter and egg mixture. Chill dough if necessary.
Shape into small balls.
Roll each ball in sugar then flatten on a cookie sheet with a flat bottomed glass dipped in sugar.
Bake in a 350 degree oven for about 12 minutes.
Dough may also be used in a cookie press.
You can use colored sugar to coat the balls for the holidays.
