Coconut Date Nut Quick Bread(Diabetic) - cooking recipe
Ingredients

2 c. flour
2 tsp. baking powder
salt
1/2 tsp. baking soda
2 eggs
1/4 c. milk
3/4 c. thawed, frozen, unsweetened apple juice concentrate
1/4 c. margarine, melted
2 tsp. vanilla
cream cheese
1/4 c. chopped pecans
1/3 c. unsweetened flaked coconut (can be found in health food stores)
Preparation

Combine dry ingredients in bowl; set aside.
Beat eggs in bowl.
Blend in apple juice, margarine, milk and vanilla.
Add to dry ingredients, mixing just until moistened.
Stir in dates, nuts and coconut.
Spread in greased loaf pan.
Bake at 350\u00b0 for 45 minutes or until pick inserted in center comes out clean.
Cool 10 minutes in pan.
Remove.
Cool. Slice and serve with cream cheese. Makes 12 servings.
