Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    3 c. peeled, grated zucchini
    2 tsp. vanilla
    3 c. flour
    1/4 tsp. baking powder
    1 tsp. salt
    1 tsp. baking soda
    3 tsp. cinnamon
    1/2 c. chopped nuts (optional)
Preparation
    Beat eggs until foamy.
    Add next four ingredients.
    Mix lightly but not well.
    In a separate bowl mix all dry ingredients. Add flour mixture and blend.
    Add nuts.
    Bake in a greased and floured loaf pan at 325\u00b0 for 1 hour.
    Remove from pan immediately and cool on rack.
    Bread may be frozen for later use.
    May be served with cream cheese.
