Crustless Zucchini Quiche - cooking recipe

Ingredients
    3 c. grated zucchini
    1 small onion, chopped
    1 c. biscuit mix
    4 eggs, beaten
    1/2 c. oil
    1/2 c. Parmesan or Mozzarella cheese, grated
    1 tsp. parsley flakes
    1/4 tsp. salt
    pepper to taste
Preparation
    Mix all ingredients until zucchini is evenly coated.
    Pour into buttered 10 x 6-inch or 13 x 4-inch pie plate.
    Bake 30 minutes at 350\u00b0.
    Yields 6 portions.
