Christmas Bread - cooking recipe

Ingredients
    3 beaten eggs
    1/2 c. oil
    1/2 c. milk
    2 1/2 c. flour
    1 c. sugar
    1 tsp. baking powder
    1 tsp. soda
    1/2 c. raisins
    1 tsp. cinnamon
    1/2 tsp. salt
    2 c. shredded carrots
    1 1/3 c. coconut
    1/2 c. snipped maraschino cherries
    1/2 c. chopped pecans
Preparation
    Combine beaten eggs, oil and milk.
    In large bowl, stir together flour, sugar, baking powder, soda, cinnamon and salt. Add egg mixture; mix just until thoroughly combined.
    Stir in carrots, coconut, cherries, raisins and nuts.
    Turn into a well-greased 9 x 5 x 3-inch pan.
    Bake in 350\u00b0 oven for 45 to 60 minutes.
    Remove from pan and cool.
    Makes 1 large loaf.
