Ingredients

4 c. flour
2 tsp. cinnamon
1 tsp. ginger
1 tsp. baking soda
1 tsp. salt
1 c. vegetable oil
1 c. molasses
1 c. sugar
2 eggs
Preparation

Preheat oven to 350\u00b0.
In bowl, combine flour, cinnamon, ginger, baking soda and salt; set aside.
In large mixer bowl, combine vegetable oil, molasses and sugar; mix at speed 5 until thoroughly blended (about 2 minutes).
Add eggs; blend for 1 minute.
Reduce to speed 1.
Gradually add flour mixture; beat well (about 1 minute).
Drop by teaspoon onto greased cookie sheets.
Bake at 350\u00b0 for 10 to 11 minutes.
Yields 5 dozen 2-inch cookies.
