Zucchini Relish - cooking recipe
Ingredients

10 c. unpeeled, chopped zucchini
4 c. chopped onions
5 Tbsp. salt
2 1/2 c. vinegar
6 c. sugar
1 Tbsp. dry mustard
1 Tbsp. turmeric
2 tsp. celery seed
1 Tbsp. cornstarch
2 tsp. mustard seed
1/2 tsp. red pepper
1/2 tsp. black pepper
Preparation
-
Combine zucchini, onions and salt; let stand overnight.
Rinse in cold water; drain.
Combine remaining ingredients; add to vegetables.
Bring to a boil and simmer 20 minutes, stirring often.
Put into hot jars and seal.
