Zucchini & Pineapple Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    1 tsp. vanilla
    2 c. zucchini, grated
    3 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1 tsp. cinnamon
    1 c. crushed pineapple
    1 c. nuts, chopped
    1/2 c. raisins (optional)
Preparation
    Beat vigorously together the first 3 ingredients; add vanilla and grated zucchini.
    Measure dry ingredients and mix together before adding to egg mix.
    Drain pineapple.
    Beat eggs and add pineapple, nuts and raisins.
    Divide into 2 loaf pans.
    Bake for 45 to 50 minutes at 350\u00b0.
    Insert toothpick into center of loaves. If no dough sticks to the toothpick, the loaf is done.
