Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. ground onions
    2 green peppers, ground
    2 red peppers, ground
    1/4 c. salt
    1 heaping Tbsp. cornstarch
    1 tsp. celery seed
    1/2 tsp. pepper
    1 tsp. nutmeg
    1 tsp. turmeric
    4 1/2 c. sugar
    2 1/2 c. vinegar
Preparation
    Mix the zucchini, onions and peppers with 1/4 cup salt; set in refrigerator overnight.
    Drain and rinse well with cold water. Put the vegetables in a large kettle.
    Add the remaining ingredients.
    Boil for 20 to 30 minutes.
    Stir to prevent sticking.
    Seal in jars.
    Process in boiling water bath.
