Zucchini Alfredo - cooking recipe

Ingredients
    5 large zucchini
    1 tsp. salt
    2 to 3 cloves garlic, minced
    2 Tbsp. olive oil
    8 oz. pkg. cream cheese, cubed
    3/4 c. half and half cream
    1/2 c. shredded parmesan cheese
    black pepper
    nutmeg
Preparation
    Cut zucchini into long thin strips about 1/4 inch wide. In a large colander, toss the zucchini with salt, allow to drain for one hour, then rinse and drain. Pat dry. In a 12 inch skillet, cook zucchini and garlic in hot oil for about 2 or 3 minutes or until crisp-tender. Transfer mixture to a large bowl. In the skillet heat cream cheese and half and half until smooth, stir in parmesan, then add zucchini, heat through. Place in a serving dish, sprinkle with pepper, nutmeg and additional parmesan.
