Zucchini Fritters - cooking recipe

Ingredients
    2 c. zucchini
    2 Tbsp. butter
    1/4 c. Parmesan cheese
    2 eggs
    1/2 c. biscuit mix
    dash of salt
    dash of pepper
    1 tsp. curry powder
Preparation
    Stir together biscuit mix, cheese, salt and pepper.
    Stir in beaten eggs.
    Fold in zucchini.
    In skillet, melt butter over medium heat.
    Use 2 tablespoons mixture for each fritter.
    Fry 3 to 5 minutes on each side until brown.
    Yields 8 to 10 fritters.
