Zucchini And Tomato - cooking recipe
Ingredients

2 Tbsp. butter
1/2 c. chopped green pepper
1/4 c. chopped onion
2 c. sliced zucchini, 1/2-inch thick (about 3 small)
1/2 c. soft bread crumbs
1/4 c. grated Romano cheese
1 tsp. salt
dash of pepper
2 c. tomato wedges
1/2 c. shredded Cheddar cheese
Preparation
-
Melt butter and saute green peppers and onions.
Add zucchini, bread crumbs, Romano cheese, salt and pepper.
Turn into 1 1/2-quart covered casserole.
Bake at 375\u00b0 for 20 minutes.
Add tomatoes and bake 10 minutes more.
Melt Cheddar cheese on top and serve.
