Pineapple Zucchini - cooking recipe

Ingredients
    zucchini, peeled, seeded and cut into chunks to make 17 c.
    1/2 tsp. pineapple oil
    46 oz. pineapple juice
    3 c. sugar
    1/2 c. lemon juice
Preparation
    Put zucchini in large bowl and sprinkle pineapple oil over chunks.
    Toss well.
    On stove combine pineapple juice, sugar and lemon juice.
    Heat until sugar is dissolved.
    Loosely fill pint jars and put syrup over.
    Seal and process in hot water bath 5 minutes.
    Do not process over 5 minutes or it will get too soft.
