Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow squash
    1 green pepper
    1 small onion
    1/2 c. evaporated milk
    salt and pepper to taste
    1/2 stick margarine
    3 c. shredded Cheddar cheese
    2 eggs, beaten
    16 saltine crackers, broken
Preparation
    Cook squash, green pepper and onion in water until tender. Drain and mash.
    Add margarine and 2 cups cheese (reserving 1 cup to sprinkle on top).
    Add eggs, milk and crackers.
    Mix well; season to taste.
    Place in a shallow 2-quart greased casserole dish. Top with remaining cheese and bake, uncovered, at 350\u00b0 for 30 minutes.
