Ingredients

3/4 c. shortening
3/4 c. sugar
1 egg
1 c. mashed cooked carrots (cold)
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Preparation

Cream shortening and sugar.
Add egg and mix well.
Add carrots and mix well.
Add dry ingredients and mix well.
Add vanilla. Drop by teaspoon on ungreased cookie sheet.
Bake until lightly browned on bottom.
Frost with icing.
