Zucchini Relish - cooking recipe
Ingredients

12 c. chopped zucchini
5 Tbsp. salt
4 chopped onions
1 red bell pepper
4 c. sugar
2 c. vinegar
2 Tbsp. celery seed
1/2 tsp. pepper
1 tsp. dry mustard
1 tsp. turmeric
2 Tbsp. cornstarch
1/4 c. vinegar
Preparation

Let zucchini, onions and salt set overnight. Rinse and drain well. Add the red bell pepper, sugar, vinegar, celery seed, pepper, dry mustard and turmeric to zucchini mixture in large pan until hot.
Add cornstarch mixed with vinegar. Boil 8 to 10 minutes; bottle and seal.
