Zucchini Fritters - cooking recipe

Ingredients
    1 to 1 1/2 lb. zucchini
    1 c. flour
    2 eggs
    6 to 8 oz. grated Provolone cheese
    1 tsp. chopped onion
    1 tsp. fresh dill
    1 tsp. fresh parsley
    salt and pepper to taste
Preparation
    Place all ingredients in large bowl.
    Mix well by hand.
    Drop by tablespoons into large skillet with 1 inch of hot oil in it. Cook for a few seconds, then lift up with spatula so they do not stick to skillet.
    They will then float.
    Cook approximately 2 minutes on each side or until golden brown.
    Drain well.
    Serve warm.
