Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini
4 c. ground onions
5 Tbsp. salt (pickling salt)
1 large pepper, ground
2 1/2 c. cider vinegar
5 c. sugar
1 Tbsp. nutmeg
2 Tbsp. celery seed
1 tsp. dry mustard
Preparation

Peel zucchini and mix with onions, pepper and salt.
Cover and let stand overnight.
Drain in colander under cold water.
Mix other ingredients and cook until well mixed.
Add drained vegetables and cook 30 minutes.
Seal hot.
You can add can of pimiento when ready to seal.
Pimiento and mustard seed are optional.
