Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    2 tsp. vanilla
    1 tsp. baking soda
    1 tsp. salt
    1/2 c. chopped nuts (optional)
    1 c. oil
    2 1/2 c. grated zucchini
    3 c. flour
    1 tsp. baking powder
    2 1/2 tsp. cinnamon
Preparation
    Beat eggs until fluffy.
    Add oil, sugar, zucchini and vanilla. Mix all dry ingredients; add to egg mixture.
    Stir until just blended.
    Bake in 2 loaf pans, greased and floured.
    Bake at 325\u00b0 for 1 hour, or until toothpick comes out clean.
