Waioli-Room Carrot Bread - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/4 c. nuts
    1 tsp. vanilla
    1 c. salad oil
    1 1/2 c. sugar
    2 c. grated carrots
    3 eggs
    1 c. raisins or 1/2 c. raisins and 1/2 c. coconut
Preparation
    Sift flour, salt, soda and cinnamon
    together.\tMake
    a well in the dry ingredients.
    Add nuts,\toil,
    vanilla, sugar, raisins and coconut.
    Add eggs and grated
    carrots.
    Mix until well blended.
    Pour into well-greased loaf pans.
    Let stand 20 minutes before
    baking.
    Bake
    at 350\u00b0 for about
    40
    to
    45 minutes. Cool before slicing.
