Zucchini Loaf - cooking recipe

Ingredients
    3 c. shredded zucchini
    1 c. cooked brown rice
    1 c. wheat germ
    1 1/4 c. shredded Cheddar cheese
    1 c. chopped walnuts
    2 c. sliced fresh mushrooms
    4 green onions, sliced
    1 tsp. dried oregano leaves
    2 to 4 minced garlic cloves
    1/2 tsp. dried thyme leaves
    1/2 tsp. dried sage leaves
    1/2 tsp. salt
    dash of pepper
Preparation
    Preheat oven to 375\u00b0.
    Combine zucchini, rice, wheat germ, 1 cup cheese, walnuts, mushrooms, green onions, eggs, oregano, garlic, thyme, sage, salt and pepper in a large bowl until well blended. Pour in a 9 x 5-inch loaf pan.
    Sprinkle top with remaining cheese. Bake for 50 minutes until golden brown.
    Serves 6.
