Ingredients

2/3 c. and 1 Tbsp. sugar
1/4 c. butter
1/4 c. buttermilk
3/4 c. peanut butter
1 egg
1 tsp. vanilla
1 1/4 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Preparation

In a medium bowl combine 2/3 cup sugar, butter and buttermilk.
Beat until creamy.
Add peanut butter, egg and vanilla.
Mix well.
In a medium bowl combine flour, baking powder, baking soda and salt.
Stir into the peanut butter mixture.
Drop the dough by full teaspoons onto ungreased baking sheet.
Flatten the dough with fork dipped in the remaining sugar. Bake at 375\u00b0 for 10 to 12 minutes or until lightly browned.
