Pizzella (Italian Cookies) - cooking recipe

Ingredients
    6 eggs
    3 1/2 c. flour
    1 1/2 c. sugar
    1 c. oil
    4 tsp. baking powder
    6 Tbsp. vanilla
    2 Tbsp. sugar
    2 sticks margarine, softened
Preparation
    Mix eggs, sugar, oil, baking powder, vanilla and margarine together.
    Blend in flour and mix.
    Make sure Pizzella griddle is hot before cooking.
    Place a heaping teaspoon full on each griddle for about 30 seconds.
    Close top for 30 seconds.
    Peel off and repeat to cook the rest of the batter until finished.
    Cool on rack then stack in piles.
    To make Pizzellas not as crispy, decrease the amount of oil to 1/2 cup and use only one stick of margarine.
    You can change the flavors for a different taste by adding anise, almond or chocolate.
