Zucchini Bread - cooking recipe

Ingredients
    2 c. all-purpose flour
    3/4 tsp. baking powder
    3/4 tsp. soda
    3/4 tsp. salt
    3/4 tsp. cinnamon
    3 eggs
    1 c. sugar
    1/3 c. salad oil
    1 1/3 c. grated zucchini, unpeeled
    3/4 tsp. lemon extract
    2/3 c. chopped pecans
    2/3 c. raisins
Preparation
    Stir together flour, baking powder, baking soda, salt and cinnamon; set aside.
    Beat eggs with sugar for 2 minutes, gradually add oil and beat 2 minutes.
    Add extract alternately.
    Fold flour mixture and zucchini until moistened.
    Stir in pecans and raisins; do not overmix.
    Pour batter into well greased 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 1 hour and 10 minutes to 1 hour and 15 minutes.
    Cool 10 minutes, remove from pan.
    Cool completely on wire rack; wrap in plastic wrap.
