Pineapple Nut Bread - cooking recipe

3 c. sifted flour
4 tsp. baking powder
1/2 tsp. soda
1 tsp. salt
1/2 tsp. cinnamon
2 Tbsp. butter
3/4 c. sugar
1 egg
3/4 c. evaporated milk
1 Tbsp. lemon juice
1 small can crushed pineapple
1/2 c. chopped nuts
Preparation

Sift the flour with the baking powder, soda, salt and cinnamon.
Cream the butter and sugar thoroughly in a large mixing bowl.
Beat in egg.
Stir in milk, lemon juice, pineapple with its syrup and nuts.
Add flour mixture all at once and stir just until dry ingredients are dampened.
Turn into a well-greased loaf pan. Bake in preheated 375\u00b0 oven until done when tested (about 55 minutes).
Let cool in pan 5 minutes, then turn out on cooling rack.
Makes 1 loaf.
