Cranberry Nut Bread - cooking recipe
Ingredients

2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. each: baking soda and salt
1/4 c. shortening or margarine
3/4 c. orange juice
1 Tbsp. grated orange rind
1 beaten egg or substitute
2 c. coarsely chopped cranberries
1 c. sugar
1/2 c. chopped nuts
Preparation

Sift together the flour, sugar, baking powder, soda and salt. Cut in shortening until crumbly.
Combine juice and rind with beaten egg.
Pour into dry ingredients, mixing just enough to dampen.
Fold in nuts and chopped berries.
Spoon into greased 9 x 5 x 3-inch loaf pan.
Spread sides and corners slightly higher than center.
Bake at 350\u00b0 for about 1 hour, until crust is golden and toothpick inserted comes out clean.
Store overnight for easy slicing (16 slices).
