Ingredients

1/2 lb. butter
2 c. sugar
3 eggs
4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
2 tsp. lemon extract
1 tsp. vanilla extract
1 lb. Ricotta cheese
Preparation

Cream butter and sugar together.
Add eggs.
Add Ricotta cheese and mix well.
Add lemon and vanilla extracts.
Add all dry ingredients until a stiff dough forms.
Bake at 350\u00b0 for 12 to 15 minutes.
Cool and glaze or frost lightly.
Makes 5 dozen cookies.
