Herbed Zucchini Fans - cooking recipe

Ingredients
    4 zucchini
    1 to 2 Tbsp. vegetable oil
    2 Tbsp. margarine, melted
    1/2 tsp. ground mustard
    1/4 tsp. thyme
    1/8 tsp. pepper
Preparation
    To make zucchini fans, slice each squash lengthwise, making cuts 1/4 inch apart, leaving slices attached at stem end.
    Fan out slices and brush both sides with vegetable oil.
    Grill squash fans over medium-hot coals three to five minutes on each side or until tender.
    Meanwhile, combine margarine, mustard, thyme and pepper. Drizzle over cooked zucchini fans.
    Yields 4 servings.
