Chinese Almond Cookies - cooking recipe

Ingredients
    2 3/4 c. flour
    1 c. sugar
    1/2 tsp. salt
    1/2 tsp. soda
    1 c. margarine or butter
    1 egg
    1 tsp. almond extract
    1/3 c. whole unblanched almonds
Preparation
    Sift flour, sugar, salt and soda.
    Cut in margarine until it looks like cornmeal.
    Add egg and extract.
    Mix well.
    Shape dough into 1-inch balls.
    Place 2 inches apart on ungreased sheet. Place almond on top of each cookie and press to flatten slightly. Bake at 325\u00b0 for 15 to 18 minutes.
    Cool on rack.
    Makes 4 1/2 dozen.
