Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. sugar
1 c. oil
2 c. grated raw zucchini, peeled
3 tsp. vanilla extract
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 c. chopped pecans (optional)
Preparation

Beat eggs until light and foamy. Add sugar, oil, zucchini and vanilla. Mix lightly but well. Combine flour, salt, soda, baking powder and cinnamon. Add to zucchini mixture. Stir until well blended. Add pecans and pour into 2 greased and floured loaf pans. Bake in a preheated 350\u00b0 oven for 1 hour.
