Joe'S Favorite Fresh Pumpkin Pie - cooking recipe

Ingredients
    3 1/2 c. pumpkin
    1 1/2 c. sugar
    1 tsp. salt
    1 tsp. ginger
    2 tsp. cinnamon
    1 tsp. nutmeg
    4 eggs
    1 c. canned milk
    2 c. whipping cream
    2 deep dish unbaked pie shells
Preparation
    Pumpkin, cut and free of any seeds.
    Boil until pumpkin is soft.
    Scrape pumpkin meat from hull.
    Measure 3 1/2 cups and heat in a heavy pan.
    Stir frequently for 10 minutes.
    Remove from heat.
    Stir together:
    sugar, salt and spices.
    Add to pumpkin. Beat eggs in a large bowl.
    Add milk and cream; beat again.
    Add pumpkin mixture and beat until smooth.
    Pour into unbaked pie shells.
    Bake at 400\u00b0 approximately 50 minutes.
