Teff Skillet Flat Bread - cooking recipe

Ingredients
    1 c. teff flour (available at Newark Co-op)
    1 tsp. baking soda
    1 1/2 c. buttermilk
    1 c. water or as needed
    2 tsp. safflower or canola oil
Preparation
    In a mixing bowl, combine flour with baking soda.
    Stir in buttermilk, then add enough water to give the mixture a fairly thick yet fluid consistency.
    Stir in oil.
    Heat a 6-inch nonstick crepe pan until sizzling hot.
    Pour in a scant 1/4 cup of batter and quickly tilt pan to form a round.
    Cook until golden brown on each side; repeat with remaining batter.
    Makes 12 to 14 pancakes. Delicious with stews and chili.
