Zucchini Bread(For 2 Loaves) - cooking recipe

Ingredients
    4 c. shredded zucchini
    3 c. flour
    2 1/2 c. sugar
    1 1/4 c. oil
    4 eggs, beaten
    1 Tbsp. + 1 tsp. vanilla
    1 Tbsp. cinnamon
    1 1/2 tsp. salt
    1 1/2 tsp. soda
    1/2 tsp. baking powder
    1 c. nuts (optional)
Preparation
    Mix all together; pour into 2 loaf pans sprayed with nonstick spray.
    Bake at 350\u00b0 for 50 to 60 minutes.
    Also makes great cupcakes and just need to bake about 25 minutes.
