Potato Bread - cooking recipe
Ingredients

1 medium potato
1/4 c. Crisco
1 qt. hot water
1/2 c. sugar
1 Tbsp. salt
12 to 14 c. flour
2 pkg. yeast
Preparation

Boil potato. While still hot, rub through sieve with Crisco. Add hot water and sugar to sieved potato; add salt.
In cup, dissolve 1 teaspoon sugar and 1/4 cup warm water; stir, then add yeast. Let stand a few minutes until yeast begins to rise. Combine potato mixture and yeast mixture.
Add 4 cups flour. Beat well. Let stand 5 minutes. Add rest of flour until dough does not stick to fingers. Place in greased bowl. Grease top of dough. Place in warm place to double. Work down; let rise again. Shape into loaves. Let rise to double. Bake at 400\u00b0 for 50 minutes.
