Southern Spoon Bread - cooking recipe
Ingredients

4 c. milk
1 tsp. salt
1 c. cornmeal (white preferred)
2 heaping Tbsp. butter
4 eggs, well beaten
Preparation

Preheat oven to 450\u00b0.
Pour 4 cups milk in the top of a double boiler.
Add 1 teaspoon salt.
Bring to a simmer but do not boil. Add cornmeal, stirring slowly and constantly.
Continue stirring until the mixture takes on a light consistency.
Add butter.
Stir until melted, then stir in eggs.
Allow mixture to come to a simmer, then remove from the heat.
Stir vigorously, then pour into a well-buttered 2-quart souffle dish.
Place in oven for 15 minutes.
Lower heat to between 400\u00b0 and 425\u00b0 and bake another 20 minutes.
Test with a straw.
If center is not firm, give it another 5 minutes.
Serve immediately.
