Ingredients

4 c. (sliced raw) cooked and cooled carrots
1 1/2 c. sugar
1 1/2 c. shortening
2 eggs
1 c. coconut
4 c. flour
4 tsp. baking powder
1 tsp. salt
2 tsp. vanilla
Preparation

Cream together sugar, shortening and eggs.
Add carrots, flour, baking powder and salt together; blend to mixture.
Add coconut and vanilla.
Drop by teaspoons onto greased cookie sheets.
Bake for 12 to 15 minutes at 350\u00b0.
When cool, frost with Orange Frosting.
