Ingredients

3 egg whites
pinch of salt
3/4 c. sugar
1 c. chopped pecans
1 tsp. vanilla
1 Tbsp. flour
Preparation

Preheat oven to 350\u00b0.
Beat egg whites and salt until stiff; add sugar and beat until very stiff.
Chop nuts.
Mix with flour and add to egg whites after adding vanilla.
Drop by spoon onto foil-lined cookie sheet.
Place in oven and turn off heat!
Leave overnight until completely cold.
Do not open oven door for any reason!
Chopped dates, coconut or chocolate chips may be added with nuts.
Makes 3 to 5 dozen cookies, depending on size.
