Zucchini Souffle - cooking recipe

Ingredients
    3 lb. zucchini, grate on large side
    6 eggs, beaten
    1 c. crumbled Ritz crackers
    1 lb. sharp Cheddar cheese, grated
    4 Tbsp. oil
Preparation
    In a large bowl mix all ingredients well.
    Place in oiled Pyrex dish
    (9 x 13-inch).
    Sprinkle top with paprika and Romano or Parmesan cheese.
    Bake at 350\u00b0 for 1 hour.
