Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. ground onion
    2 to 3 c. ground sweet peppers
    5 Tbsp. salt
    2 1/2 c. white vinegar
    6 c. sugar
    2 Tbsp. celery seed
    1/2 Tbsp. black pepper
    1 Tbsp. nutmeg
    1 Tbsp. turmeric
    1 Tbsp. dry mustard
    1 Tbsp. cornstarch
Preparation
    Wash zucchini.
    Peel if tough.
    Grind zucchini, onion and peppers.
    Put in pan and mix with salt.
    Stand overnight in refrigerator.
    Rinse in colander and drain.
    Place spices, vinegar and sugar with mix.
    Blend.
    Bring to a boil.
    Simmer 30 minutes. Put in canning jars while hot to seal.
