Ingredients

1 1/4 c. granulated sugar
3/4 c. butter flavored Crisco
2 Tbsp. lemon juice (fresh)
1 Tbsp. grated lemon peel
1 tsp. vanilla
1 tsp. lemon extract
1 egg
1 3/4 c. flour
1 tsp. salt
3/4 tsp. baking soda
1/4 c. sweetened flake coconut (optional)
Preparation

Combine sugar, shortening, lemon juice, lemon peel, vanilla and lemon extract.
Mix at medium speed of mixer until well blended.
Beat egg into creamed mixture.
Combine flour, salt and baking soda.
Mix into creamed mixture just until blended. Sprinkle with coconut, if desired.
Drop rounded tablespoonfuls 2 inches apart on ungreased cookie sheet and bake at 375\u00b0 for 8 to 10 minutes or until cookies are set and edges are golden brown. Watch closely so coconut doesn't burn.
Cool for 2 minutes on baking sheet.
Then remove to foil to cool completely.
