Zucchini Provencale - cooking recipe

Ingredients
    3 medium (3 c.) zucchini, sliced
    2 c. sliced fresh mushrooms
    2/3 c. chopped onion
    1 clove minced garlic
    2 Tbsp. butter or margarine
    2 (6 oz.) cans tomato paste
    1 tsp. salt
    1/8 tsp. freshly ground pepper
    2/3 c. grated Parmesan cheese, divided
Preparation
    Combine
    zucchini, mushrooms, onions, garlic and butter in
    a 2-quart microwave-proof casserole dish.
    Cover and cook on
    High (maximum power) 8 to 10 minutes, or until vegetables are
    tender. Stir
    in
    tomato paste, 1/3 cup cheese, salt and pepper.
    Sprinkle remaining cheese on top.
    Cook on 70 (Roast) 3
    to
    3
    1/2 minutes,
    or until heated through and cheese is melted.
