Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beaten
    2 c. sugar
    3 Tbsp. vanilla
    1 c. salad oil
    3 c. self-rising flour
    2 c. zucchini
    2 Tbsp. cinnamon
    1 c. chopped nuts
    raisins and pineapple (if desired)
Preparation
    Beat eggs, sugar, vanilla and salad oil in electric mixer. Grate zucchini (remove seeds and peel).
    Sift flour and cinnamon; add dry ingredients to liquid.
    Add chopped nuts.
    May add raisins and pineapple, if desired.
    Pour into buttered loaf pans.
    Bake for 1 hour at 325\u00b0.
