White Bread - cooking recipe

Ingredients
    1 1/4 c. lukewarm water
    1 pkg. yeast
    1 c. milk, scalded
    2 Tbsp. sugar
    2 tsp. salt
    2 Tbsp. shortening
    7 to 7 1/4 c. sifted all-purpose flour
Preparation
    Dissolve yeast and 1 teaspoon sugar in 1/4 cup lukewarm water, taken from total amount listed.
    Let stand 10 minutes.
    Scald milk.
    Add sugar, salt, water and shortening.
    Cool to lukewarm. Add yeast mixture and flour gradually, beating thoroughly after each addition.
    Turn dough out on slightly floured board and knead until smooth, about 10 minutes.
    Place in a greased bowl.
    Brush top lightly with melted shortening.
    Cover.
    Let rise until double in bulk, about 1 1/2 hours.
    Divide into two portions.
    Shape into loaves and place in two greased bread pans.
    Cover.
    Let rise until double in bulk.
    Bake at 375\u00b0 for 45 to 50 minutes.
    Yields 2 loaves.
