Twisted Zucchini Loaf - cooking recipe
Ingredients

3 1/2 c. all-purpose flour
1 1/4 c. brown sugar
1 Tbsp. baking powder
1/2 tsp. salt
2 c. grated zucchini
2 eggs
1/4 c. vegetable oil
1 c. each grated carrot and drained crushed pineapple
1/2 c. shredded coconut
Preparation

Heat oven to 350\u00b0.
In bowl, combine first 4 ingredients. Squeeze water from zucchini; stir zucchini into bowl with remaining ingredients.
Bake in greased 9-inch loaf pan 1 hour. Cover with foil.
Bake 30 minutes.
Makes 16 servings.
