Grandma Carbonara'S Zucchini Frittata - cooking recipe
Ingredients

10 eggs
3/4 c. Parmesan cheese
1/4 tsp. black pepper
1/4 tsp. salt
2 tsp. butter
1 1/2 to 2 c. chopped sauteed zucchini (in 1 tsp. olive oil)
2 Tbsp. minced herbs (may use 1 Tbsp. oregano and 1 Tbsp. basil or dill, sage, rosemary, parsley)
Preparation

In a large mixing bowl, beat eggs with cheese, pepper and a dash of salt until it is liquid.
Melt butter in a 10 to 12-inch skillet with ovenproof handle.
Melt over high heat until foam subsides.
Pour egg mixture into skillet.
Reduce heat to medium-high. Break air bubbles with a fork.
With back of fork, pull sides of egg mixture to center of pan so liquid runs under cooked eggs. Cook 3 to 4 minutes until bottom is set and top is still liquid.
