Cheese And Mushroom Matzo Kugel - cooking recipe

Ingredients
    5 matzo, broken in pieces
    2 Tbsp. butter
    2 onions, finely chopped
    1 c. sliced mushrooms
    1/2 lb. cottage cheese
    1 Tbsp. snipped parsley
    2 eggs, well beaten
    1/2 tsp. salt
Preparation
    Soak matzos in cold water for 2 minutes.
    Remove and squeeze out as much water as possible.
    Set aside.
