Polk Greens - cooking recipe
Ingredients

tender shoots of polk
generous amount of boiling water (enough to cover greens when they are blanched)
bacon drippings
salt and pepper to taste
Preparation

Choose tender shoots of polk; wash well.
Have a generous amount of boiling water (enough to cover greens when they are blanched).
Add greens.
Bring back to a boil.
Cook 15 minutes; drain.
Season with bacon drippings.
Salt and pepper to taste. Serve hot.
