Zucchini-Tomato Skillet(Yields 6 Servings) - cooking recipe
Ingredients

1/4 c. oil
1 onion, minced
4 medium zucchini, sliced
1/4 lb. mushrooms, cleaned and sliced
3 medium tomatoes, core top cut out, sliced
3 Tbsp. chopped parsley
1/4 c. grated Parmesan cheese
1 1/2 tsp. minced fresh basil
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
1 (4 oz.) c. shredded Cheddar
Preparation

In a large skillet, saute onion.
Add mushrooms and zucchini for 5 minutes, stirring often.
Add tomato slices.
Cook 3 or 4 minutes, stirring through gently.
Drain off juice that has formed. Then stir in parsley, Parmesan cheese, basil, salt, pepper and garlic powder.
Stir and cook over medium heat just until heated through.
Sprinkle with the Cheddar cheese.
Cover for 3 to 5 minutes until cheese is melted.
Or transfer to shallow serving dish, sprinkle cheese over and pop under broiler until cheese melts.
