Zucchini Sweet Relish - cooking recipe

Ingredients
    10 c. grated zucchini
    2 red bell peppers, ground
    4 c. onions, ground
    5 Tbsp. salt
    1 tsp. turmeric
    1 tsp. nutmeg
    1 tsp. celery seed
    1/2 tsp. black pepper
    1 Tbsp. cornstarch
    2 1/2 c. vinegar
    4 1/2 c. sugar
Preparation
    Combine zucchini, peppers and onions.
    Sprinkle with salt. Cover tightly and refrigerate overnight.
    Next morning, rinse well (cold water) and drain well.
    Add spices, vinegar, sugar and cornstarch.
    Cook gently 20 to 30 minutes.
    Pour into hot sterilized jars.
    Seal immediately.
